Ooey Gooey Butter Cake

Day 26: I am thankful for baking (and baked goods).

For those of you who don't know, I love cooking (specifically, baking). It is by far one of the most relaxing things to do. Plus, I get bored a lotttt so it's a good way to keep me entertained for a while. 

To inspire some of you to bake some delicious desserts [and share them with me], I'll post one of my favorite recipes!

It's a Paula Deen recipe, so it's only fitting that it's called Ooey Gooey Butter Cake. {I know that sounds disgusting, but it is one of the most heavenly, delicious desserts.}

Ingredients:
  • Cake:
    • 1 package yellow cake mix
    • 1 egg
    • 8 tablespoons of butter, melted
  • Filling:
    • 8 oz. package of cream cheese, softened
    • 2 eggs
    • 1 teaspoon vanilla
    • 8 tablespoons of butter, melted
    • 16 oz. box of confectioners sugar 
Directions
  • Preheat oven to 350 degrees
  • Mix the cake mix, egg, and butter with an electric mixer (consistency of cookie dough)
  • Pat the mixture into the bottom of a lightly greased pan. (I like to pat the mixture up on the sides to give the cake a good crust all around).
  • Beat the cream cheese until smooth in a large bowl. (This part can be difficult if the cream cheese isn't softened enough. Because of my lack of patience, I usually end up beating it for a second, then knocking it off the beaters, then beating it more. It's tedious, but it  doesn't take long.)
  • Add the eggs, vanilla, and butter to the cream cheese. Mix well.
  • Add the powdered sugar and mix well. 
  • Spread the cream cheese mixture over the cake (cookie) batter.
  • Bake for 40-50 minutes. {Don't over bake it! It is supposed to be gooey on the inside. When the top has turned brown, it's done.}
I promise this is one of the best things in the world. 

There are lots of varieties to this recipe, too! I like to add chocolate chips to mine, but you can also make Pumpkin Ooey Gooey Cake.  

I'm thankful that baking is a thing. If I could do anything, I would definitely start a bakery. [I'm not exactly sure how to do that, though]

Halloween Puppy Chow

This is the first of several Halloween posts. Prepare yourself.

Puppy chow. Muddy buddies. White Trash. I've heard a lot of different names for it, but it's always just as amazing (and almost addictive... what?)

This is a food. {People give you the funniest looks when you tell them you're eating puppy chow.} 

Since it's almost Halloween (and I'm on a time crunch tonight), I thought I'd share my favorite recipe for puppy chow with a Halloween twist.

Warning: This a messy recipe, but trust me, it's definitely worth it. {It tastes fabulous.}

Ingredients:
  • 9 cups Chex cereal
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter
  • 1/4 cup butter
  • 1 teaspoon vanilla
  • 1 1/2 cups powdered sugar
  • 1 1/2 cups candy corn
  • 1 1/2 cups Reese's Pieces
  • 2 cups pretzels
Directions:
  1. Melt the chocolate chips and add in the peanut butter. [I usually do this on the stove in a large pot, but you can do it in the microwave- be careful though because peanut butter burns easily]
  2. Stir in vanilla.
  3. Add the Chex to the peanut butter-chocolate mixer. Mix until all of the cereal is coated. [this seems difficult while you're doing it, but just keep mixing it in... it's not that hard]
  4. Put the coated Chex in a large bag (zip-lock or paper bag). Add the powdered sugar, seal, and shake until coated.
  5. Spread the cereal on wax paper to let it cool. [honesty time: I don't always do this, so it is okay to skip it]
  6. Mix in candy corn, Reese's Pieces, and pretzels.

Chocolate Pecan Pie

We ate all the cupcakes...

We needed some new form of sugar, so we tried out a new recipe (old recipe, new twist). We added chocolate chips to our pecan pie. {yum}

It's super easy to make and extremely delicious.

Here's what you need:
  • 2 eggs, beaten
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2cup butter, melted
  • 1/2 cup all purpose flour
  • 1 unbaked pie shell
(sugar not shown)
Mix it all together. Make sure the butter isn't hot when you add the eggs.
Appetizing.

 
Pour it all into the pie shell and pop it into the oven at 325 degrees for 1 hour.
 
Et voila! C'est fini.
